What is bilona ghee?
Bilona is the traditional way of making ghee. Milk is set into curd, the curd is hand-churned to separate makkhan, and only then is the makkhan heated slowly into ghee. It takes far more time and milk than shortcut methods, which gives bilona ghee its deeper aroma, richer taste and grainy texture.
